Q: I’m looking for the best source for purchasing my Thanksgiving dinner for twenty people. Does Louisiana Bayou Bistro offer this, and do I get to make any choices?
A: Yes, we do offer this with a large variety of traditional offerings. Everything from appetizers to desserts, rice dressing to turkey cooked any way you want it. You may create your own menu with your own choices. Call today to order for pick up on Wednesday, November 22 before Thanksgiving. Please no orders after Monday, November 20.
Q: How does the Bayou Bistro make such a great shrimp and corn bisque?
A: Well we start with fresh shrimp and sweet corn. It also takes a little love for cooking. We start by sauteing onion, garlic, red pepper, parsley, and sweet basil in unsalted butter. Then we add diced tomatoes and corn. This has to cook for about 30 minutes; this allows the corn to release its flavors. Then add your shrimp, we use 90-100 count for our bisque. You can use bigger or smaller shrimp, but these do just fine. Bring the shrimp to a boil and add your heavy whipping cream and bring this back to a boil. Watch it closely it will stick once you add the cream. Add salt and pepper to taste. Now you are cooking like the Bayou Bistro. Remember we’re not just something, we’re something else!
Q: How do you get such a great bread pudding?
A: The base of our bread pudding is the key. From there you can add different types of fruit, such as bananas, pineapples, peaches, apples, blueberries or raisins. You can also add nuts, such as almonds, pecans, or walnuts. We prefer our roasted and spicy. You can cook down your fruit like your bananas, sauteé them down in a little butter and brown sugar before adding them to your bread pudding. Also you can make an array of different sauces to top your bread pudding. We prefer our butterscotch rum sauce, it's always a crowd pleaser.
